Let the kids cook for Dad!
One simple idea is to let your kids help prepare this Father's Day BBQ! It’s easy! Just help the children chop up hot dogs. Throw them into a crock pot with baked beans, and serve with Dad’s favorite chips and drink—then make root beer floats for dessert!

Breakfast in Bed: Blueberry Buttermilk Pancakes

Pancakes
2 cups all-purpose flour
1/4 cup sugar
2-1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 large eggs
2 cups buttermilk
1/4 cup unsalted butter, melted
(plus unsalted butter to cook the pancakes)
1 cup fresh blueberries

In a large bowl, sift together the flour, sugar, salt, baking powder and baking soda.
In another bowl, mix the eggs, buttermilk and melted unsalted butter thoroughly.
Combine the wet ingredients and the dry ingredients and mix gently with a spatula, just until all the ingredients are wet. The batter should be lumpy. Overmixing will result in flat, heavy pancakes.
In a pan, melt 1-2 tablespoons of butter over medium-low heat. Ladle the batter into the pan 1/3 of a cup at a time. Depending on the size of your pancakes and pan, you can make 2 or 3 at a time.
Sprinkle the blueberries over the pancakes and cook until bubbles appear along the edges and surface of the pancakes. The edges will begin to brown slightly (should take 2 or 3 minutes).
Carefully flip the pancakes and cook for an additional 2 or 3 minutes.
Serve the pancakes with butter and maple syrup. Or add a dollop of whipped cream.
This recipe will make 12 pancakes.


Sweet & Sour Barbecued Ribs

Ribs
6 lbs back ribs cut in small pieces
1 1/4 cup ketchup
3/4 cup water
1/4 cup honey
2 tbsp worcestershire sauce
4 tsp lemon juice
1 small onion
1/2 tsp salt
1/2 tsp pepper

Mix together the ketchup, water, honey, worcestershire sauce, lemon juice, onion, salt, and pepper. Cook sauce for about 10 minutes, stirring occasionally.

Cook ribs for one hour over medium-hot coals, turning occasionally. Brush ribs with sauce.
Turn and cook for 20 to 30 minutes longer.

Chicken Broccoli Alfredo with Penne

Making a good Alfredo sauce can be tough task, but with the right ingredients and right cooking method it can be pretty easy.

Serving Size:  2 adults

Ingredients:

Sauce:
1pint               Heavy Cream
4tsp                Butter
1/2 Cup           Romano/Parmesan Cheese (add to taste)
Salt and Pepper to taste

Main Ingredients:
2 Hand Fulls    Broccoli Florets (Fresh or Frozen)
2                     Chicken Breasts
1/2                  Flour
2 cups             Penne Pasta
1/4 cup            Vegetable Oil
1/2 tsp             Crushed Fresh Garlic
1tsp                 Chopped Fresh Parsley (Optional)


Instructions:

First step is to get the sauce right and then to let it sit. In a small sauce pan pour 1 pint of Heavy Cream and bring to low boil. Once warm enough, add the 4tsp of butter and let melt. Once the butter has melted, begin to slowly add the Romano Cheese or Parmesan Cheese or Combo to the cream. The best way to mix in the cheese is to either use a Whisk or to use a mechanical whisk on low. Once mixed thoroughly, taste and add cheese, salt and pepper to your preferred taste.

Step two - Boil pasta

Step Three - Lightly salt and pepper chicken and then cut chicken breast into strips. Next, dust chicken with flour and prepare oil to sear chicken. When the oil is hot or when water spatters at contact, place chicken in pan and sear chicken to a golden brown color.

Final Step - Combine chicken, broccoli, pasta and sauce, then let simmer for 5-10 min. 


Budget Friendly Recipes

Broccoli Bake

A delicious and easy to make dish with broccoli, chicken and a cheese topping.

Ingredients

    * 4 large chicken breasts
    * 1 large bag of broccoli
    * Curry powder
    * Sour cream
    * 2 cans of cream of mushroom soup
    * 16 ounces shredded sharp cheese

Directions

    * Wash chicken breasts and boil until tender.
    * Cut chicken into bite size pieces and line the bottom of a 13x9 baking dish.
    * Boil broccoli until tender, drain and put on top of the chicken.
    * Mix sour cream, cream of mushroom soup and curry powder together and spread over chicken and broccoli.
    * Lay shredded sharp cheese on top and bake until cheese starts to melt. Enjoy!

Fried Chicken

Simple fried chicken marinated with seasoned salt, black pepper and soy sauce.

Ingredients

    * 1 chicken, cut up into pieces
    * Seasoned salt
    * Black pepper
    * 1 teaspoon of soy sauce
    * Garlic powder
    * Flour
    * Cooking oil

Directions

    * Wash chicken pieces and place in a covered dish.
    * Marinate overnight with seasoned salt and black pepper in a dish on the
      bottom shelf of your refrigerator.
    * After chicken has marinated, roll in flour to coat. Shake off any excess flour.
    * Fill a large pan with about 3-4 inches of cooking oil. Heat oil to 325°F.
    * Carefully place chicken in hot oil and cook until golden brown.



BBQ Pork Ribs

The meat falls off the bone and the flavor is fantabulous.

Ingredients

    * 2 pounds pork ribs
    * 2 cups of Coke
    * Salt
    * Pepper
    * Garlic powder
    * Onion powder
    * Barbecue sauce, I use Kraft BBQ sauce with brown sugar
    * 1 cup orange juice

Directions

    * Place Coke and enough water to fill a large pan for parbroiling.
    * Add salt, pepper, garlic powder and onion powder to water/Coke mix.
    * Parbroil for 30-40 minutes on medium.
    * Remove ribs from pan and place in a baking dish.
    * Pour 2 cups of BBQ sauce into a small bowl.
    * Add 1 cup of orange juice to BBQ sauce. This gives a sweet taste to the BBQ sauce.
    * Cover ribs with BBQ sauce and bake in a 350°F oven for 20-25 minutes. Enjoy.

Cook Time: 1 hour
Total Time: 1 hour 15 minutes
